WHere is a simplified version of a drink found on our latest menu. Designed as a batch pre-mixed that's packed with the tastes associated with Christmas time, making it excellent for your festive gathering. Reserve the remaining citrus syrup you can use for brunch beverages, puddings, or to make additional servings of the drink.
The Bikini Cocktail
Serves 10 servings
Ingredients for the Citrus Syrup (produces 750ml)
300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g fine sugar
To make the Premix (makes 850ml, enough for 10)
400ml good quality vodka
100ml dry gin
150ml peach liqueur
200ml clementine syrup (from the recipe above)
Fresh cranberries, to garnish
Mandarin essential oil, as a final touch
Directions
For the Cordial: Place every items inside a pan, bring to a gentle boil, mixing so the sugar melts. Then, take off the burner and let it to cool fully. Transfer into an sterilised bottle, close it keeping it in the fridge, it can be stored for around four weeks.
To make Batch Mix: Pour every spirits and syrup in a large bottle, let it rest for 60 minutes, then filter it best through muslin, to ensure it's fully clarified.
To serve: Pour 85ml of your batch mix into a cocktail shaker packed with ice, and agitate carefully for a minute to chill. Filter into a cold coupe glass or equivalent, top with some cranberries and finish using a light spray with the mandarin essence over the top.
